My Weekly Menu: 1/13

Here is this week’s menu. As always, if I haven’t posted a recipe I will try to post it later this week. This is going to be a pretty easy week.

Monday: Tacos, beans, and spanish rice (rice is already cooked and in freezer)

Tuesday: It is my Birthday! So… we are off for a night of family fun! NO cooking for this Momma! :)

Wednesday: Crockpot - Chicken Enchilada Chili (we are trying this for the first time. I’ll let you know how it turns out, or if I change anything. I am actually thinking about adjusting it to taste similar to a sour cream sauce enchilada. YUM!)

Thursday: Crockpot -Beef, potatoes, and carrots (Have to have a quick dinner, because I will be off teaching the free coupon class! :) )

Friday: Spaghetti Casserole (I am thinking about making more so I can have some in the freezer for later!)

Saturday: We will be doing fast food for the kids, to eat during our soccer game. Mommy and Daddy will probably eat leftovers.

Sunday: Lunch with family member and breakfast for dinner

Other cooking plans this week:

  • I am all out of my pre-cooked ground turkey! I will be definitely browning turkey this week.
  • I would also like to make some freezer dinners for my sister this week. She will be having a baby next week and I would like to stock her freezer with a some good meals.
  • I would also like to take another try at some homemade granola bars (if there is time -This might have to wait until next week)

    Last night (Sunday): We had Mexican Lasagna. Super easy and my husband said it’s his new favorite.

    Monday: trying out your one pot pasta recipe with chicken, penne, red sauce, and mozzarella (one pot chicken parm!)

    Tuesday: roast in the crock pot

    Wednesday: Chicken Enchilada soup in the crockpot

    Thursday-Saturday: I’m out of town and Daniel’s parents are coming, so dinner’s up to them!

    Let me know how your enchilada chili turns out. We love soups, especially tex-mex ones!
