My Weekly Menu (Still taking it easy, but planning this time)

Here is this week’s menu. I am still taking it easy. My husband is still working like a mad man, and with the wind storms we have had lately it looks like he will continue to work like crazy. I guess I will just have to face it and get back to our old routine!

Monday: We had my one pot chicken pasta. I used 1/2 container of the Philadelphia cooking creme that I got for FREE at Crest. It was delicious. Basically follow my directions in the recipe at the link above. Then instead of stirring in pasta sauce, stir in the cooking creme. I only used a half. I think the whole thing would have been too strong. My kids GOBBLED it up and were sad that there were not enough for thirds! This is definitely going on our regular list.

Tuesday: Chicken Tortilla soup -yes, I know it isn’t cold outside, but it is an EASY meal that my kids will really enjoy. I have a coupon class in Cyril that night, so I need an EASY meal.

Wednesday:Lasagna Casserole (recipe coming soon) that is in the freezer. All I have to do is stick it in the oven, serving it with green beans

Thursday: We have two soccer practices that I am coaching, so we are eating leftovers from Wednesday and/or Frozen pizza (depending on how much leftovers we have from Wednesday)

Friday: Pork Tenderloin (using Mesquite Marinade that I got for FREE from Homeland -DELICIOUS!) -baked poatoes, and broccoli

Saturday: This is a CRAZY busy day. We are having sloppy joes, that we didn’t have a few weeks back, french fries and salad

Sunday: it is EASTER! We are having it over here. I am in charge of the Ham, and the mashed potatoes. I am going to make the mashed potatoes the night before and then just place in the crockpot on low before we head to church. That way I have less work to do and more time to enjoy the kids!

Here are the items I need this week to complete my menu: I only need the ham for Easter dinner! I love being a couponer because I don’t really need anything!

More cooking plans: I need to make banana bread with the kids -Some bananas are getting old, and my kids love mashing them up! we have several so we will probably make 2 or 3 and place the rest in the freezer.
