Crockpot: Cheesy Bacon Chicken

I cannot take credit for this recipe. I wish I could. ;) I got this recipe originally from Crockpot 365. I adapted it slightly because I thought 12 slices of bacon was ALOT. The 5 slices I used were plenty. I also only used 1/2 cup of cheese instead of the 1 cup she called for. This is a recipe your family is going to love.

Cheesy Bacon Chicken

Ingredients:

  • olive oil
  • 3-5 chicken breast halves (just throw in whatever you need to feed your family. I thawed mine slightly just so I could slice them in chunks)
  • 5 pieces cooked and crumbled bacon (I used turkey bacon)
  • 1/4 cup teriyaki sauce
  • 1/2 cup Ranch salad dressing
  • 1/2 cup shredded cheddar cheese

Directions:

  • Pour about a tablespoon of olive oil the bottom of the crockpot. Place chicken in the crockpot.
  • In a small bowl mix together teriyaki sauce and ranch dressing (Yes, I know it seems weird… I was a little scared at this point).
  • Pour over chicken. Toss crumbled bacon over top.
  • Cook on low for about 6 hours or on high for 3 hours. During the last 30 minutes, sprinkle the shredded cheese and allow to melt.

I was really worried about mixing ranch dressing and teriyaki sauce, but I am so glad I did. This dinner was fabulous! My kids and husband raved about it! We are definitely putting this on our menu list. If you like cheese and bacon, you will love this. If you have two crockpots, you could make the crockpot baked potatoes in the other crockpot for an incredibly easy meal.

I am also thinking this would be fabulous on burgers. Hmmm… maybe another recipe to come. :) Let me know what you think. I am so curious if you will love it as much as my family did.

I’ve made this twice and LOVE it! We serve it with brown rice and it’s perfect.

We tried the cheesy bacon chicken last night and it was delicous! My picky eaters even said this is good. I did add some mushrooms towards the end and forgot to put cheese on it but it was still yummy. We will keep this recipe on hand. Thanks for a easy and frugal recipe.
