Red Velvet Cake Mix Cookies – The Perfect Cookie for Christmas!

If you know much about me, then you know I LOVE cake mix cookies. Since cake mixes have been cheap lately at  MANY stores, I thought I would share on of our family’s favorites… Red Velvet Cake Mix Cookies.

Who would have thought that a red velvet cake mix would make an amazing cookie, but it actually does. We made them a while back and my boys actually decided that they were OU colors.

Since OU is playing OSU tomorrow, , I thought I would share with you incase you wanted to make a “Festive” cookie for game day.

They have been deemed Boomer Sooner cookies and the kids and adults love them! ;) (Don’t worry OSU fans… I am getting creative with coming up with a cookie for you too! Stay tuned!)

Now these also make the PERFECT Christmas cookie and would be a festive cookie to add to your cookie platter whether you are making them for neighbors, friends, or teachers.

Red Velvet Cake Mix Cookies

Total Time: 20 minutes

Red Velvet Cake Mix Cookies

Ingredients

  • 1 box of Red Velvet Cake Mix cookies
  • 2 eggs
  • 1/3 cup of vegetable oil
  • Powdered sugar for the topping

Instructions

  1. Preheat the oven to 375 degrees.
  2. Mix everything except the powdered sugar into a bowl (Batter will be thick).
  3. Spoon onto cookie sheets leaving about 2 inches between cookies.
  4. Bake for 8 to 10 minutes until cookies brown SLIGHTLY on the edges.
  5. Allow to cook slightly and sprinkle with powdered sugar.

    So I put the eggs I need from the box PLUS two more eggs?
