Skillet Bruschetta Chicken Recipe

You are about to view probably one of the BEST chicken dinner recipes. I know… I say that a lot, but seriously this dinner looks and tastes fancy without all the crazy work. You know I like to keep it simple in the kitchen.

Since summer is officially here, most of us (the frugal ones) are trying to avoid heating up the kitchen. This is a skillet dinner that takes hardly any time at all to make. The lack of effort doesn’t show up in the taste though. If you love bruschetta (well and even if you don’t) you have to PIN this recipe and make it! I promise it will not disappoint.

Skillet Bruschetta Chicken

Cook Time: 10 minutes

Total Time: 20 minutes

Skillet Bruschetta Chicken

Ingredients

  • 3 Boneless Skinless Chicken Breasts
  • 1 can of diced tomatoes (or crushed works great too)
  • 1/2 can of water (use the tomatoes can)
  • salt and pepper (eye ball it)
  • garlic salt (eye call it)
  • 1 teaspoon of Italian Seasoning
  • Italian Cheese
  • 1/4 cup croutons crushed up

Instructions

  1. Slice your chicken breasts lengthwise and then pound them slightly.
  2. Heat up a large skillet with a little bit of oil.
  3. Place chicken in the heated skillet. Season with salt and pepper.
  4. Allow the chicken to brown and then flip. Season with salt and pepper again.
  5. Once browned, dump in your canned tomatoes, water, Italian seasoning, and garlic salt.
  6. Bring to a boil, turn heat to low, cover and simmer for 10 minutes until chicken is cooked through.
  7. Meanwhile, take your croutons and crush them up slightly.
  8. We like to serve this chicken on pasta. Spoon tomatoes and sauce over chicken. Then top with croutons and cheese. Delicious!

Make sure your chicken gets nice and brown before you flip it. It keeps your chicken juicy and ads tons of flavor to your sauce.
