Strawberry Cake Mix Cookies Recipe

Strawberry Cake mix cookies are one of the BEST little cookies. They take practically no work but taste like you have been baking forever. ;) If you have been following Coupon Closet for a while now then you know that I am not the best baker. I can cook up a delicious dinner with practically nothing, but baking on the other hand… a different story.

I love cake mix cookies though because they are painless, they don’t make much of a mess, and you can have them made in no time.

School is starting back tomorrow for my kids so I wanted to make them some homemade cookies to go in their lunchboxes and they picked Strawberry cake mix cookies. I think it is the powdered sugar part that they like best!

Strawberry Cake Mix Cookies

Total Time: 20 minutes

Strawberry Cake Mix Cookies

Ingredients

  • 1 Strawberry cake mix
  • 2 eggs
  • 1/3 cup of vegetable oil
  • Powdered sugar for the topping

Instructions

  1. Preheat the oven to 375 degrees and spray your cookie sheets with non stick spray.
  2. In a mixing bowl, mix the cake mix , eggs and oil (batter will be thick).
  3. Spoon the cookies (teaspoon size) onto the cookie sheets.
  4. Bake for 8 - 10 minutes until they start to brown around the edges.
  5. Allow to cool on the cookie sheet for a few minutes before moving them.
  6. Then sprinkle with powered sugar.

This is freezer friendly!

1. You can freeze them before you bake them.

Just mix up the batter and place them on a cookie sheet like you are going to bake them. Instead of baking, freeze them on the cookie sheet. Once you have them frozen, place in a freezer bag, and you can make as few or as many as you want. Just add a minute or two to your bake time.

2. You can freeze them after you bake them.

Bake them like you normally would, but then you just freeze the left overs. That way your cookies will last longer. You can toss them in kids’ school lunches easily.
